This Vegan GF Granola is full of nutrition, taste great and kids love it. You can use maple syrup or honey which are both natural sweetners. I use bob’s red mill GF organic old fashioned rolled oats for this granola. This recipe can make Granola or GF granola bars, just by altering a simple step which I will discuss below. I like to change it up by using different fruit, for example cranberries, fresh apples sliced in cubes, persimmons when in season. Swapping out sesame seeds for hemp seeds is good for variety. Using walnuts instead of almonds is another option to keep the recipe fresh and interesting. So have fun with this recipe; involve your kids to see which fruit they would like to eat. Kids Love to offer suggestions and when they think something was created especially keeping them, it’s easy to get them to eat a meal that is nutritious and good for them.

Most Store bought cereals are processed, full of sugar and preservatives. I believe in using Organic, GF, and Local ingredients as much as possible. This raises the nutrition value of the food as well as stimulates the local economy. Plus local food is fresh, taste great and it’s beneficial to the local people. When you purchase straight from the farmers you get to know the source.

My daughter loves this granola and I love the nutrition profile with it being GF, organic and using high nutrition ingredients. She take the Granola bars to school for snack, eats it for breakfast with some almond milk and fresh banana, and with vegan coconut yogurt. It’s simple to give a new twist to my GF vegan granola just by accompanying it with different food items. It taste completely different depending on what it’s eaten with.

  • 4 Cups
    Organic GF oats
  • 1/2 Cup
    Organic crushed almonds
  • 1/2 Cup
    Organic pumpkin seeds
  • 1/2 Cup
    Organic sunflower seeds
  • 1/2 Cup
    Organic hemp seeds
  • 1/4 Teaspoon
Sea salt fine (or himalayan salt)
  • 1/2 Teaspoon
    Organic cinnamon
  • 1/4 Cup
Organic dried cranberries (or fruit of choice)
  • 1 Teaspoon
    Organic vanilla extract
  • 1/3 Cup
    Organic extra virgin coconut oil
  • 1/3 Cup
    Organic Maple syrup

  1. Mix all the DRY ingredients (accept cranberries) in a large bowl. Toss well.

  2. Mix all the wet ingredients in a separate bowl. Combine both.

  3. Combine the two mixing and coating well.

  4. Pre heat oven to 300° F.

  5. Now add the cranberries working them well into the ingredients.

  6. Spread the mixture evenly on a baking tray lined with parchment paper

  7. Bake on middle rack until golden brown hue is achieved 35-45 minutes.

*If making granola: stir/flip the mixture ½ way about 20 min into baking. Pat down lightly then take it out when golden brown another 15-20 min. It will harden as it cools down.

*Granola bars: no need to flip. These will come out chewy. So bake for 25 minutes then check, if needed bake another 3-5 minutes. Avoid “over baking” otherwise you won’t be able to cut them into bars. Remember, the cooking process is still going on even when you have taken the baking sheet out of the oven until granola is completely cool.

Once done let cool, cut into desired shape. I find bar shapes are the easiest way to go.

This is a high nutrition recipe that adults and kids enjoy equally. It's a great start to your day, add banana slices for a creamier option.

I would love to hear your comments if you try this recipe, let me know if you swapped out the fruit as well as any other creative additions/alterations.
